Vegan Chocolate Cupcakes with Raw Vegan Vanilla Frosting

This is a great and easy recipe for all vegans and vegetarians out there. Also an amazing and easy raw vegan frosting for all raw vegan people.


For our dry ingredients we will need:
  • 1 1/2 cups all-purpose flour
  • 1 cup white sugar
  • 1/4 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt


For our wet ingredients we will need: 
  • 1/3 cup vegetable oil or sunflower oil 
  • 1 teaspoon vanilla extract
  • 1 teaspoon distilled white vinegar
  • 1 cup lukewarm water


  • Mix all dry ingredients in one bowl
  • Mix all wet ingredients except water in another bowl 

  • Add water and mix well 


  • Pour wet ingredients into dry ingredients 

  • Mix well make sure there is no lumps


  • Preheat the oven to 350F degrees 
  • Prep cupcake mold

  • Add cupcake batter into the mold bout halfway full


  • Bake for 20 min or until toothpick comes out clean 

  • Cool before frosting
  • From whole batter you will get 12 cupcakes


For the Raw vegan frosting we will need:
  • 8 oz of raw cashews (soak for 2 hrs min)
  • 3 tbs of agave nectar or to taste
  • 2 tbs of raw vanilla extract 
  • 1/4 cup of water
  • 1 tbs of raw coconut oil

  • Blend everything together
  • And place it in the freezer for 15 min

  • Frost the cupcakes with piping bag if you have 

  • Decorate with berries and Enjoy!

  • Decorate with coconut  shreds if you love coconut as much as I do

Tres Leches Cake Recipe

This is original mexican recipe for Tres Leches cake, however i made another version of it with my simple cake recipe and i feel like it turned out better. Because original recipe turned out kind of dense.

We will need:

1-¾ cup of Cake Flour
½ cup of Unsalted Butter at room temperature
1 tsp of Baking Powder
½ tsp of Salt
¾ cup of Granulated Sugar
5 Eggs, separated
¾ cup of Whole Milk
1 tsp of Vanilla Extract

For the 3 Milk Mixture:
1/4 cup of Whole Milk
1 14 oz can of Sweetened Condensed Milk
1 12 oz can of Evaporated Milk

For the Frosting:
1 ½ cup of Heavy Whipping Cream
4 Tbsp of Powdered Sugar

  • Butter needs to be room temperature 
  • Mix butter and sugar with mixer

  • Add eggs and vanilla 

  • Add flour, salt, baking powder 

  • Mix well

  • Spray Pan with cooking spray

  • Bake for about 30-35 min or till toothpick comes out clean

  • Flip cake upsidedown 

  • Poke holes in the cake with fork

  • Mix 3 milks 

  • Pour mixture on top of cake ( make sure your cake is in the deep enough platter) 

  • It wont take all the mixture at once

  • Keep in fridge for about 3-4 hours, the cake should soak in all the milk mixture 

  • Prep whipping cream

  • mix whipping cream with powdered sugar

  • Dont over beat the whipping cream

  • Frost the cake

  • Decorate with maraschino cherries ( this says Happy Birthday in russian) 

  • Serve with cherries

Valentines Day Cooking!!!

Valentines Day Cooking!!!

I decided to surprise my love with a cake and chocolate covered strawberries. Cake is very easy to make and you can tweak it anyway you like. 






Valentines Day Cake 

You'll need:

  1. 2  9" Pans 
  2. Mixer 
  3. Cooking Spray
  4. Spatula
  5. Piping bag 
Ingredients: 

  1. 1 cup of all purpose flour 
  2. 2 cup of sugar
  3. 6 eggs
  4. 2-3 cups of heavy whipping cream
  5. 1 tbs of vanilla 
  6. 2 cups of coconut shavings (optional) 
  7. 1-2 cups of blueberries (optional) 
  8. 1 cup of strawberries 
  9. 2 kiwis 



Batter: 
Preheat oven to 375F degrees 
Spray cooking spray on pans
Mix eggs with sugar till mixture becomes white and thick 
Add flour and keep mixing 
Add blueberries if desired or you can add raspberries, cranberries   
Pour batter into pans divide evenly into two pans
Bake for 20-25 min or till its firm to touch 



Prepare cream:
Whip heavy whipping cream with 1 cup of sugar and add vanilla 
Mix in coconut flakes 
Blend 5-6 strawberries in blender and add them to the whip cream 

Assembling: 
Take out cake
Let it cool
Slice it in half
Spread cream
Add fruits if desired (kiwis,strawberries more blueberries or any other soft berries or fruits) 
Repeat layer by layer 
Decorate Top layer with whip cream and fruits 
Let it cool in fridge for at least 5-7hrs better if it stays there overnight 









Chocolate Covered Strawberries 




1 pack of strawberries 
1 cup of milk chocolate
1 cup of white chocolate
1/2 stick of butter
1/4 of a cup of milk 

Make a water bath
Melt milk chocolate with 1/4 stick of butter add little bit of milk if chocolate is too thick
Let mixture cool for a little 
Dip Strawberries 
Place them on  sprayed pan or parchment paper 
Let it cool

Prepare white chocolate same way you prepared milk chocolate
Dip or drizzle it on top of already covered strawberries    

Place it in fridge for an hr or till chocolate is completely cooled

Napoleon Cake Recipe

Today is the day. The day I start my new blog.
Never had one, but today I have decided that I need one.
Today is my boyfriend's birthday. I decided to surprise him with a giant box that has nothing but one huge balloon and a card with a note with directions on how to find his gift. I placed that box in his room and posted notes with clues all over the house. However, the main gift that I got for him is still in my car waiting for me to get to his house and give it to him. 




I also made a birthday cake. Here is the picture of it.
Recipe:
Get 4 sheets of puff pastry dough 
Bake them and let them cool
Cream:
750-1000ml of milk
2-3 eggs
1 cup of sugar
2tbs of vanilla
2-3tbs of flower
2,5 sticks of unsalted butter
Warm up milk on the stove add everything except butter start mixing till the mixture thickens up. After it became almost sour cream consistency turn the stove off and add butter. Mix thoroughly so the butter is dissolved. Spread the cream on the puff pastry dough decorate with crumble that you have left over from puff pastry dough. Leave it in the fridge over night :)
