Spring Ratatouille with White Button Mushrooms


Spring is finally here and what a great dish to celebrate this wonderful sunny day.
We will need:
  • 1 zucchini
  • 1 white zucchini or yellow squash
  • 1/2 of green pepper
  • 1/2 of red bell pepper
  • 2-3 tomatoes
  • 1 eggplant ( can use chinese eggplant) 
  • 3 cloves of garlic 
  • 1+ lbs of mushrooms
  • salt, pepper to taste
  • 1 tsp of garlic powder
  • 1 tsp of onion powder
  • 1 tsp of dry basil


  • Slice all vegetables very thinly

  • Salt and pepper them and let them sit for a little while your pan is warming up

  • Fry all vegetables till they all have nice color but not fully cooked

  • About 1min on each side

  • Dice up 2 tomatoes, peppers and onion

  • Fry onions till golden brown

  • Add peppers and cook for about 5-6 min till they are almost soft 

  • Add tomatoes ( if your tomatoes are not juicy enough add 1/2 cup of water) and simmer the sauce 

  • Place sauce in deep tupperware 

  • Arrange Vegetables on top of the sauce
  • Preheat oven to 390F degrees 

  • Cook for about 10-15 min in the oven
  • Serve while its nice and hot

Pirozhki (Pan Fried Pierogies)

Pirozhki is very in russian cuisine. Pirozhki are stuffed dough with meat, potatoes, rice and eggs, jam or anything you could imagine. Here is the recipe for Pirozhki with meat

We will need:
  • 3 Pillsbury biscuits packs
  • 2-3 Large onions 
  • 4-5 lbs Ground Beef raw or 3-4 lbs cooked



  • Dice onions and pan fry on low heat till they are extra soft might take you 20-25 min add salt and pepper to taste 



  • Mix meat with onions, if you have cooked ground beef saute for about 5 min to get it nice and warm and mixed in
  • If you have raw ground beef saute till its fully cooked and drain all the juices 



  • For one biscuit you will need about 1 large tablespoon



  • Close and fold biscuits 


  • Flip it and apply pressure to make it more flat

  • Heat sunflower oil and on medium heat place pirozhki and cook on each side for 2 min

  • Flip every 2 min 

  • All 4 sides need to be fried


  • Serve while nice and warm!
  • Dont forget you can make them with jam, rice, potatoes and anything you like

Drunken Cheese ball

Cheese and wine are the match made in heaven and we all know that. That is why I decided to make cheese ball with wine.
We will need:
8 oz of cream cheese soften 
2 cups of finely shredded cheese
1 tsp of garlic powder 
1 tsp of onion powder
2 oz of chardonnay wine 
1/2 tsp of dried dill
1/4 pepper
1/4 paprica 
1/4 coriander
1/4 dried basil


  • Mix all dry ingredients with wine and let it sit for about 30 min 

  • Mix well with cream cheese 

  • Add shredded cheese

  • Form a ball. Use plastic wrap it helps you shape it and doesn't make mess 


  • Let it sit in fridge for about 4 hrs minimum better if you leave it in the fridge overnight
  • Serve with crackers 







Tres Leches Cake Recipe

This is original mexican recipe for Tres Leches cake, however i made another version of it with my simple cake recipe and i feel like it turned out better. Because original recipe turned out kind of dense.

We will need:

1-¾ cup of Cake Flour
½ cup of Unsalted Butter at room temperature
1 tsp of Baking Powder
½ tsp of Salt
¾ cup of Granulated Sugar
5 Eggs, separated
¾ cup of Whole Milk
1 tsp of Vanilla Extract

For the 3 Milk Mixture:
1/4 cup of Whole Milk
1 14 oz can of Sweetened Condensed Milk
1 12 oz can of Evaporated Milk

For the Frosting:
1 ½ cup of Heavy Whipping Cream
4 Tbsp of Powdered Sugar

  • Butter needs to be room temperature 
  • Mix butter and sugar with mixer

  • Add eggs and vanilla 

  • Add flour, salt, baking powder 

  • Mix well

  • Spray Pan with cooking spray

  • Bake for about 30-35 min or till toothpick comes out clean

  • Flip cake upsidedown 

  • Poke holes in the cake with fork

  • Mix 3 milks 

  • Pour mixture on top of cake ( make sure your cake is in the deep enough platter) 

  • It wont take all the mixture at once

  • Keep in fridge for about 3-4 hours, the cake should soak in all the milk mixture 

  • Prep whipping cream

  • mix whipping cream with powdered sugar

  • Dont over beat the whipping cream

  • Frost the cake

  • Decorate with maraschino cherries ( this says Happy Birthday in russian) 

  • Serve with cherries 


Oliv'e (Russian Potato Salad)

As american people love potato salad, russian people love Olivie and this is the salad for any special occasion. It is very easy to make and taste amazing.

We will need:
  • 3 boiled potatoes
  • 3-4 boiled carrots 
  • 5 eggs
  • cucumber or 1/2 of english cucumber
  • 2 pickles 
  • 1 onion
  • 1 can of peas
  • Mayo
  • 2 lbs of ham or chicken, beef or any kind of meat you like 


  • Dice potatoes, carrots and eggs
  • Dice pickles 

  • Dice cucumber (borth cucumbers and pickles need to be very finely diced) 

  • Dice onion and add into the bowl

  • Dice ham or meat larger than cucumbers


  • Mix everything well

  • Add mayo about 1 cup

  • Decorate and serve add salt and pepper to taste 
  • Enjoy!!!
