Zucchini Cakes


Easy Recipe, very healthy and fast to make.Its great for breakfast or lunch. For Vegan Version, substitute eggs and flour for cooked oatmeal ( take dry oatmeal add hot water, boil for 2 min or let it sit for 5min, mix it with shredded zucchini and pan fry it). Turns out as good as original Recipe. 


We will need:
  • 3 medium size zucchini ( i had regular green and white (note that white zucchini are a little dryer than green)
  • 2 eggs
  • 1/2-1 cups of flour 
  • Salt and Pepper 



  • Shred Zucchini
  • Add eggs, flour (start with half a cup and see how it think it becomes) , salt and pepper 
  • *Zucchini have a lot of water so your best bet is to shred zucchini first add salt mix it together and wait for about 5-10 min till water starts to come out, drain it and then add flour) 



  • Mix Well 



  • Preheat pan and add sunflower oil
  • Form pancakes with fork or spoon



  • Cook for about 2-3 min on each size or till golden brown on medium-high heat



  • Serve with Sour Cream
  • Enjoy!!!

Buckwheat with Baby Portobello (Cremini) Mushrooms

Healthy Vegan Recipe


We will need:

  • 2 cups of buckwheat 
  • 4 cups of water
  • 4 small onions or 2 big ones
  • 1-2 lbs of baby portobello (cremini) mushrooms (you can substitute with any kind of mushrooms, white button mushrooms would taste amazing too) 
  • 2-3 gloves if garlic
  • 3 tbs of sunflower oil 
  • Salt
  • Pepper


  • Rinse Buckwheat under cold water
  • Boil 4 cups of water in the kettle
  • Add hot water and salt to buckwheat and boil for 5min
  • Cover with lid, take off the stove and let it sit in warm place ( I just leave mine on back burner)

                             


  • Chop onions
  • Pour sunflower oil into skillet and let it get hot
  • Sauté onions till golden brown on medium-high heat


  • Lower the heat and Add mushrooms 


  • Add salt and pepper
  • Sauté for about 20min or until done
  • Add garlic and saute for about 1min



  • Mix buckwheat with mushrooms
  • Serve with sour cream and chives
