Spring is finally here and what a great dish to celebrate this wonderful sunny day.
We will need:
- 1 zucchini
 - 1 white zucchini or yellow squash
 - 1/2 of green pepper
 - 1/2 of red bell pepper
 - 2-3 tomatoes
 - 1 eggplant ( can use chinese eggplant)
 - 3 cloves of garlic
 - 1+ lbs of mushrooms
 - salt, pepper to taste
 - 1 tsp of garlic powder
 - 1 tsp of onion powder
 - 1 tsp of dry basil
 
- Slice all vegetables very thinly
 
- Salt and pepper them and let them sit for a little while your pan is warming up
 
- Fry all vegetables till they all have nice color but not fully cooked
 
- About 1min on each side
 
- Dice up 2 tomatoes, peppers and onion
 
- Fry onions till golden brown
 
- Add peppers and cook for about 5-6 min till they are almost soft
 
- Add tomatoes ( if your tomatoes are not juicy enough add 1/2 cup of water) and simmer the sauce
 
- Place sauce in deep tupperware
 
- Arrange Vegetables on top of the sauce
 - Preheat oven to 390F degrees
 
- Cook for about 10-15 min in the oven
 - Serve while its nice and hot
