Amazing Russian Authentic Crepe (Blini) Recipe

Who doesn't love crepes? Most americans grew up eating pancakes, but I grew up on crepes. Crepes originally came from France, but Russians love crepes. We call them blini, we eat them with jam, sour cream, caviar, smoked salmon and anything else you can imagine. We stuff them with cheese, potatoes, rice, meat and chicken. 
Crepes are very easy to make. Below is a perfect crepe recipe.



We will need:
  • 2 Cups of all purpose flour
  • 4 large eggs
  • 4 cups of milk
  • 2 tsp of salt (if you are eating them with something sweet reduce amount of salt 1tsp) 
  • 2 tsp of sugar
  • Butter
  • Mixer 


  • Mix all ingredients till they are silky and have no lumps


  • Preheat pan and grease it with butter 


  • Spread about 2 oz of crepe mixture all around the pan 
    • *Note, first couple of crepes might not come out as great, because pan is not hot enough. You might want to add a little more milk if the batter is too thick or a little flour if its too thin




  • Cook for 30 seconds on each side or till its golden brown 



  • Make sure you butter the edges so they won't become crisp



  • Enjoy!!!
    • From this recipe you will get about 12-15 extra thin delicious crepes



As I said, Crepes are great with anything you love. Here is an example of what Russians like to eat their crepes  with. Also, there is step by step preparation of stuffed crepe.


Take a crepe that was only fried on one side 


  • Place stuffing. I have meat and rice that i used for pirozhki 



  • Fold corners and roll the crepe 


  • Pan fry on medium heat on sunflower oil, serve with sour cream 







Creamy Spinach Chicken Roulade

If you love chicken and if you like spinach dip as much as I do, this is a great and easy recipe! 


We will need
  • 4 Chicken Breasts 
  • 1 Large Onion
  • 4 oz of cream cheese 
  • Spinach
  • Onion and Garlic Powder 
  • Salt and Pepper to taste



  • Split Chicken breast in half and tenderise it 



  • Salt and Pepper chicken



  • Meanwhile chop and pan-fry onions till golden brown and add spinach and saute for couple of minutes



  • Add onion, garlic powder and salt and pepper to taste 
  • Add Cream Cheese and mix well 



  • Divide your spinach mixture and put it in the chicken



  • Spread spinach mixture 



  • Roll chicken with spinach mixture in it 



  • Heat Sunflower oil in a pan and place chicken in it



  • Cook from all of 4 sides till its golden brown 

  • Make sure your chicken is above 165F degrees  



  • Enjoy this tasty warm cheesy goodness!!!

Vegan Chinese Eggplant Stew

Great recipe for any kind of eggplants. Very easy and very fast to make.


We Will Need:
  • 3 medium size eggplants
  • 1 large tomato
  • 1 large onion or 2 small ones
  • 3 cloves of garlic
  • 1/4 bunch of cilantro 
  • 1/4 cups of sunflower oil
  • Salt and pepper to taste


Dice eggplant and onions


  • Preheat oil in a pan and put onions in it



  • Cook for about 5 min or until golden brown 



  • Add eggplants 



  • Cook eggplants for about 15-20 min on low heat until they are reduced in size
  • Add diced tomatoes 
  • Add salt and pepper 


  • Once tomatoes are cooked ( additional 5 min or so) add minced garlic and turn of the heat
  • Serve with cilantro warm or cold
    • Could be blended and used as spread on toast

Zucchini Cakes


Easy Recipe, very healthy and fast to make.Its great for breakfast or lunch. For Vegan Version, substitute eggs and flour for cooked oatmeal ( take dry oatmeal add hot water, boil for 2 min or let it sit for 5min, mix it with shredded zucchini and pan fry it). Turns out as good as original Recipe. 


We will need:
  • 3 medium size zucchini ( i had regular green and white (note that white zucchini are a little dryer than green)
  • 2 eggs
  • 1/2-1 cups of flour 
  • Salt and Pepper 



  • Shred Zucchini
  • Add eggs, flour (start with half a cup and see how it think it becomes) , salt and pepper 
  • *Zucchini have a lot of water so your best bet is to shred zucchini first add salt mix it together and wait for about 5-10 min till water starts to come out, drain it and then add flour) 



  • Mix Well 



  • Preheat pan and add sunflower oil
  • Form pancakes with fork or spoon



  • Cook for about 2-3 min on each size or till golden brown on medium-high heat



  • Serve with Sour Cream
  • Enjoy!!!

White Wine Lemon and Lime Sea Scallops

 


We Will Need

  • 10-11 Large Sea Scallops 
  • 1/2 Lemon Juiced
  • 1/2 Lime Juiced
  • 1/3 of medium size jalapeno
  • 1/4 of cup of Extra Virgin Olive Oil
  • 3 cloves of garlic
  • 1 tsp of onion powder
  • 1/4 of a cup of white wine (optional, I used chardonnay) 
  • 1 tbs of honey 
  • Ginger Knuckle 




  • Peel and grate ginger 
  • Dice jalapeno 
  • Mince garlic
  • Juice lemon and lime 
  • Add Oil
  • Mix all together 



  • Add scallops and let it sit in fridge for about 2 hrs


  • Heat pan with sunflower oil and put scallops in
  • Cook for about 3 min on each side 




  • Serve with spicy mayo ( 1 part mayo 1/2 parts of sriracha) 
  • Enjoy!!!
